Ingredients
  

4 large flour tortillas

8 oz (225g) sliced ham

8 oz (225g) sliced cheddar cheese (or cheese of your choice)

1 cup fresh spinach leaves (optional)

1/2 cup cream cheese, softened

1 tbsp Dijon mustard (optional)

1 tbsp butter or olive oil (for grilling)

Salt and pepper to taste

Salsa or hot sauce for serving (optional)

Instructions
 

Prepare the Filling: In a small bowl, mix the softened cream cheese with Dijon mustard until smooth. Season with salt and pepper to taste.

    Assemble the Tortilla Pockets: Lay one tortilla flat on a clean surface. Spread about 2 tablespoons of the cream cheese mixture over the entire surface. Layer with 2 oz of sliced ham, followed by 2 oz of cheddar cheese, and a few fresh spinach leaves if using.

      Fold the Tortilla: Fold in the sides of the tortilla inward, then roll it up tightly from the bottom to create a pocket. Repeat this step for the remaining tortillas.

        Toast the Pockets: Heat a non-stick skillet over medium heat and add butter or olive oil. Once hot, place the tortilla pockets seam-side down in the skillet. Toast for about 3–4 minutes on each side or until golden brown and the cheese is melted.

          Slice and Serve: Remove from the skillet and let cool slightly. Cut each pocket in half on the diagonal. Serve warm with salsa or hot sauce, if desired.
