Zucchini Lasagna with Ground Turkey

3 medium zucchinis

1 pound ground turkey

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick). Sprinkle with salt and let them sit for about 15 minutes to draw out moisture. Rinse and pat dry.

      Cook Turkey Mixture: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Add the ground turkey and cook until it’s browned, breaking it apart with a spatula.

        Add Tomatoes: Stir in the crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Let the mixture simmer on low heat for about 10 minutes to meld the flavors.

          Assemble Lasagna: In a baking dish, spread a thin layer of the turkey mixture on the bottom. Layer the zucchini slices over the turkey, then dollop a third of the ricotta cheese over the zucchini. Sprinkle a bit of mozzarella and Parmesan on top. Repeat the layers (turkey, zucchini, ricotta, mozzarella, and Parmesan) until all ingredients are used, finishing with a layer of mozzarella and Parmesan on top.

            Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
