2 cups cooked shredded chicken

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 red onion, finely diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup chopped fresh cilantro

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons lime juice

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper, to taste

Whole wheat tortillas or large lettuce leaves for wrapping

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro. Toss gently to mix everything evenly.

    In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth and well combined. This will be your zesty dressing.

      Pour the dressing over the chicken mixture and stir well until all the ingredients are coated evenly.

        Lay out the whole wheat tortillas or large lettuce leaves on a flat surface. Spoon a generous amount of the chicken salad mixture into the center of each wrap.

          Fold in the sides of the tortilla or lettuce leaf and then roll it up tightly from the bottom to the top, ensuring the filling is secure.

            If desired, slice each wrap in half diagonally and secure with a toothpick for easier handling. Serve immediately or wrap in foil for a delicious on-the-go meal.
