For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

Zest of 2 lemons

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon vanilla extract

For the Lemon Curd Filling:

1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

1 cup granulated sugar

4 large eggs

½ cup unsalted butter, cut into pieces

For the Meringue Topping:

4 large egg whites

1 cup granulated sugar

½ teaspoon cream of tartar

1 teaspoon vanilla extract

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the cake batter: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the vanilla and lemon zest.

      Combine dry ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the creamed mixture, alternating with the milk. Mix until just combined.

        Bake the cakes: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

          Prepare the lemon curd: In a medium saucepan, whisk together lemon juice, zest, sugar, and eggs. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 10-12 minutes. Remove from heat and stir in butter until fully melted and smooth. Let it cool slightly before refrigerating until set.

            Make the meringue: In a clean, dry bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add the sugar, one tablespoon at a time, beating on high speed until stiff peaks form. Mix in the vanilla.

              Assemble the cake: Place one layer of the cooled cake on a serving platter. Spread a generous layer of lemon curd over the top. Place the second layer on top and spread the remaining lemon curd over it.

                Add the meringue: Preheat the oven to 400°F (200°C). Spread the meringue over the top of the cake, making decorative swirls and peaks with a spatula.

                  Toast the meringue: Bake the meringue-topped cake for 5-7 minutes, or until the meringue is lightly golden brown. Watch closely to avoid burning.
