Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh orange juice

1/4 cup fresh lemon juice

1/4 cup olive oil

2 tablespoons honey

3 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1 bell pepper (red, yellow, or green), cut into 1-inch pieces

1 red onion, cut into wedges

Wooden skewers (soaked in water for 30 minutes)

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium mixing bowl, whisk together the orange juice, lemon juice, olive oil, honey, minced garlic, cumin, paprika, salt, and black pepper until well combined.

    Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 1 hour (or up to 4 hours for more flavor).

      Preheat your grill to medium-high heat.

        Once the chicken is marinated, remove it from the fridge and thread the chicken pieces, bell pepper, and red onion onto the soaked skewers, alternating between the chicken and the vegetables.

          Place the kabobs on the preheated grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and juices run clear. If using a meat thermometer, the internal temperature should reach 165°F (75°C).

            Remove the kabobs from the grill and let them rest for a few minutes before serving.

              Garnish with chopped parsley for a fresh finish and serve with your favorite side dishes.
