1 lb boneless, skinless chicken breast, thinly sliced

4 cups green cabbage, finely shredded

1 bell pepper, sliced (any color)

1 medium onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 2 tablespoons water

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Ingredients: Slice the chicken breast into thin strips, and prepare the cabbage, bell pepper, onion, garlic, and ginger.

    Marinate the Chicken: In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce and a pinch of pepper. Let it marinate for 10 minutes while you prepare the vegetables.

      Heat the Pan: In a large wok or skillet, heat the vegetable oil and sesame oil over medium-high heat until hot.

        Cook Chicken: Add the marinated chicken to the pan in a single layer. Stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned. Remove chicken from the pan and set aside.

          Sauté Vegetables: In the same pan, add the onion, garlic, and ginger. Stir-fry for 1-2 minutes until fragrant. Then, add the bell pepper and shredded cabbage. Stir and cook until the cabbage is wilted, about 3-4 minutes.

            Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Add in the remaining soy sauce and oyster sauce. Stir well to coat everything evenly.

              Thicken the Sauce: Pour the cornstarch mixture over the stir-fry and stir again. Cook for another 1-2 minutes until the sauce thickens slightly. Taste and adjust seasoning with salt and pepper if needed.

                Serve Hot: Remove from heat and transfer to a serving dish. Garnish with chopped green onions and sesame seeds. Serve immediately over steamed rice or noodles.
