4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

3 tablespoons olive oil

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1/3 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides. Let them sit for about 10 minutes at room temperature.

    Sear the Salmon: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the fillets from the pan and set aside.

      Create the Tuscan Butter: In the same skillet, lower the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
