8 oz rice noodles

1 lb boneless chicken breast, sliced into thin strips

2 tablespoons vegetable oil (plus more for cooking)

3 cloves garlic, minced

2 eggs, lightly beaten

1 cup bean sprouts

1 cup carrots, julienned

1 cup green onions, chopped

1/4 cup roasted peanuts, crushed

1 lime, cut into wedges

2 tablespoons fish sauce

2 tablespoons soy sauce

1 tablespoon tamarind paste

1 tablespoon sugar

1 teaspoon red pepper flakes (optional)

Fresh cilantro for garnish

Instructions
 

Prep the Noodles: Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

    Cook the Chicken: Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken and stir-fry until fully cooked and golden, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same wok, add a little more oil if necessary. Add minced garlic and sauté for about 30 seconds until fragrant.

        Scramble the Eggs: Push the garlic to one side of the wok. Pour the beaten eggs into the pan and scramble until cooked, then mix it with the garlic.

          Add Vegetables: Add the soaked rice noodles, bean sprouts, carrots, and green onions to the wok. Stir-fry for about 3-4 minutes until the vegetables are tender and noodles are heated through.

            Combine Ingredients: In a small bowl, mix together fish sauce, soy sauce, tamarind paste, sugar, and red pepper flakes if using. Pour the sauce over the noodle mixture and stir well to combine.

              Finish with Chicken: Return the cooked chicken to the wok, mixing everything together to ensure the chicken is coated in the sauce. Stir-fry for another 2 minutes.
