1 cup wild rice

2 cups vegetable broth

1 medium onion, finely chopped

2 stalks celery, finely chopped

2 medium carrots, finely diced

1 cup mushrooms, chopped (cremini or button)

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

½ cup dried cranberries

½ cup walnuts, chopped (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Wild Rice: In a saucepan, bring the vegetable broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the broth is absorbed. Fluff with a fork and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5-7 minutes until the vegetables are tender.

      Add Mushrooms and Garlic: Stir in the chopped mushrooms and minced garlic. Cook for an additional 5 minutes until the mushrooms have released their moisture and are golden.

        Season the Mixture: Sprinkle in the dried thyme, sage, salt, and pepper. Add the dried cranberries and walnuts (if using), stirring to combine all ingredients thoroughly.

          Combine with Wild Rice: In a large bowl, mix the sautéed vegetable mixture with the cooked wild rice. Adjust seasoning if needed.

            Bake the Stuffing: Preheat your oven to 350°F (175°C). Transfer the wild rice stuffing to a greased baking dish and cover with foil. Bake for 25 minutes, then uncover and bake for an additional 15 minutes until heated through and slightly crispy on top.

              Garnish and Serve: Remove from the oven and allow to cool for a few minutes. Garnish with freshly chopped parsley before serving.
