2 cups mixed nuts (walnuts, pistachios, and almonds, finely chopped)

1 cup unsalted butter, melted

1 tsp ground cinnamon

1 cup sugar

1 cup water

1/2 cup honey

1 tsp vanilla extract

Lemon wedge (for zest)

Preheat the Oven: Preheat your oven to 350°F (175°C). This temperature ensures a perfect bake for the delicate layers of phyllo.

    Prepare the Nut Mixture: In a mixing bowl, combine the finely chopped mixed nuts and ground cinnamon. This blend will add both texture and warmth to your baklava.

      Layer the Phyllo Dough: Take a sheet of phyllo dough and place it in a buttered baking dish, brushing the top lightly with melted butter. Repeat this process, layering about 8 sheets.

        Add the Nut Filling: Sprinkle a layer of the nut mixture over the phyllo. Follow with more layers of phyllo, brushing each layer with butter. Repeat until you have used all the nut mixture.

          Finish Layering: Continue layering phyllo sheets, again brushing each with butter, until you reach a total of approximately 20 layers or until ingredients are used up. Be sure to finish with at least 8 buttery phyllo layers on the top.

            Cut the Baklava: Using a sharp knife, cut the assembled baklava into diamond or square shapes. This is important for even cooking and easier serving.

              Bake: Place the baklava in the preheated oven and bake for 45-50 minutes, or until golden brown and crisp.

                Prepare the Syrup: While the baklava is baking, make the syrup. In a saucepan, combine the sugar, water, honey, vanilla extract, and a squeeze of lemon juice. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until slightly thickened.

                  Pour Syrup Over Baklava: Once the baklava is out of the oven, immediately pour the hot syrup over the entire dish. The syrup will soak into the layers, creating that signature sticky texture.

                    Cool and Serve: Allow the baklava to cool completely at room temperature. For best flavor, let it sit overnight. Serve with a cup of tea or coffee to enhance the experience.
