8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

1 cup fresh raspberries, plus extra for garnish

1 cup white chocolate chips

2 tablespoons coconut oil

Pinch of salt

Optional: Additional crushed graham crackers for rolling

Prepare the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar and continue mixing until well combined. Stir in the vanilla extract and a pinch of salt.

    Incorporate Graham Crackers and Raspberries: Gently fold in the crushed graham crackers, and add the fresh raspberries, being careful not to crush them too much—some chunks will add a nice texture.

      Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 1 hour, or until it’s firm enough to handle.

        Form the Balls: Once chilled, use a cookie scoop or your hands to form small balls (about 1 inch in diameter) from the cheesecake mixture. Place them on a parchment-lined baking sheet.

          Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Heat the mixture in the microwave in 30-second increments, stirring in between, until smooth and fully melted.

            Coat the Cheesecake Balls: Dip each cheesecake ball into the melted white chocolate, ensuring they are thoroughly coated. Use a fork to lift them out, allowing excess chocolate to drip off, and place them back on the parchment-lined tray.

              Decorate: If desired, roll the dipped balls in additional crushed graham crackers for a decorative touch. You can also top with a few small pieces of raspberry while the chocolate is still wet.

                Chill Again: Place the coated balls in the fridge for another 30 minutes to set the chocolate completely.

                  Serve: Once the chocolate has hardened, remove the cheesecake balls from the tray and transfer them to a serving platter. Garnish with additional fresh raspberries.
