8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh raspberries (or raspberry puree)

1 cup graham cracker crumbs

8 oz white chocolate, chopped

1 tablespoon coconut oil (optional, for melting chocolate)

Extra raspberries and white chocolate shavings for garnish

In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat together with an electric mixer until smooth and creamy.

    Gently fold in the fresh raspberries (or raspberry puree) until well combined. If using whole raspberries, mash them slightly to release their juices.

      Gradually add the graham cracker crumbs to the mixture, mixing until a thick and slightly sticky dough forms.

        Using a small cookie scoop or your hands, form the mixture into bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.

          Freeze the balls for about 30 minutes or until firm, making them easier to coat.

            Meanwhile, melt the white chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted and smooth. Stir in coconut oil if using for a smoother consistency.

              Once the cheesecake balls are firm, dip each one into the melted white chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing excess chocolate to drip off.

                Return the dipped balls to the parchment-lined baking sheet. If desired, sprinkle with white chocolate shavings and place a small raspberry on top for extra decoration.

                  Refrigerate the cheesecake balls for at least 30 minutes to set the chocolate.
