Ingredients
  

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries (plus a few extra for garnish)

1 cup crushed graham crackers

1 cup white chocolate chips

2 tablespoons coconut oil (for melting the chocolate)

Additional crushed graham crackers for rolling (optional)

Instructions
 

In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.

    Gently fold in the fresh raspberries, being careful not to crush them completely; you want some chunky bits for texture.

      Gradually mix in the crushed graham crackers until well combined.

        Using your hands, form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper. You should yield about 20-25 balls.

          Freeze the cheesecake balls for about 30 minutes until they are solid.

            While the cheesecake balls are freezing, melt the white chocolate chips with the coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring after each interval until smooth.

              Once the cheesecake balls are firm, dip each one into the melted white chocolate, allowing any excess to drip off. If desired, roll the balls in additional crushed graham crackers before the chocolate sets.

                Place the dipped cheesecake balls back on the parchment-lined baking sheet.

                  Once all the balls are coated, garnish with small pieces of fresh raspberry on top if desired. Return to the refrigerator to set the chocolate for about 15-20 minutes.
