2 cups cooked chicken, shredded

1 cup sour cream

1 cup cream of chicken soup (or homemade equivalent)

1 cup shredded Monterey Jack cheese (plus extra for topping)

1 cup diced green chilies (canned or fresh)

8 small flour tortillas

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, green chilies, garlic powder, onion powder, cumin, and salt and pepper. Mix well until combined.

      Place a tortilla on a flat surface and spoon about 1/4 cup of the chicken mixture down the center. Roll the tortilla tightly, then place it seam-side down in a greased 9x13-inch baking dish. Repeat this process with the remaining tortillas and filling.

        Once all enchiladas are in the baking dish, pour any remaining sauce from the bowl over the top of the rolled enchiladas. Sprinkle with additional Monterey Jack cheese.

          Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

            Once removed from the oven, let cool for a few minutes. Garnish with fresh chopped cilantro before serving.
