1 lb (450g) boneless, skinless chicken breasts, diced

2 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 can (4 oz) diced green chilies

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 cups chicken broth

1 cup corn kernels (fresh or frozen)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup sour cream

1 cup shredded Monterey Jack cheese

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Add Base Ingredients: Return the chicken to the pot and add the diced green chilies, white beans, chicken broth, corn, cumin, smoked paprika, and cayenne pepper. Stir to combine.

        Simmer: Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered for about 20-25 minutes, allowing the flavors to meld and the chili to thicken slightly.

          Finish the Chili: Remove the pot from the heat and stir in the sour cream and shredded cheese until melted and creamy. Taste and adjust seasoning with salt and pepper.

            Serve: Ladle the chili into bowls, garnishing each with fresh cilantro and a lime wedge on the side.
