Ingredients
  

1 lb fresh mushrooms (creMini or button), sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

2 cups vegetable broth (or chicken broth)

1 tbsp soy sauce or tamari

1 tbsp Worcestershire sauce

1 tsp fresh thyme (or ½ tsp dried thyme)

1 tsp fresh parsley, chopped (for garnish)

2 tbsp olive oil or butter

Salt and pepper, to taste

1/4 cup white wine (optional)

1 tbsp lemon juice (for brightness)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

    Cook the Mushrooms: Add the sliced mushrooms to the pot. Cook, stirring occasionally, for about 8-10 minutes, until the mushrooms are browned and have released their moisture.

      Deglaze (optional): If using white wine, pour it into the pot to deglaze. Scrape any browned bits from the bottom of the pot and let it simmer for a few minutes until the wine reduces slightly.

        Add Liquid Ingredients: Stir in the vegetable broth, soy sauce, Worcestershire sauce, and thyme. Bring to a boil, then reduce heat and let it simmer for about 15 minutes, allowing all the flavors to meld together.

          Blend the Soup: Remove the pot from the heat. Using an immersion blender, puree the soup to your desired consistency (smooth or chunky). If you don’t have an immersion blender, transfer the soup in batches to a stand blender.

            Finish with Cream and Lemon Juice: Return the blended soup to the pot (if using a stand blender) and stir in the heavy cream and lemon juice. Heat the soup over low heat for another 5-10 minutes, being careful not to boil it. Season with salt and pepper to taste.

              Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy it with crusty bread for a complete meal!
