1 cup cooked pulled pork (or shredded chicken)

1 cup coleslaw mix

1/2 cup jalapeños, diced (fresh or pickled)

1/2 cup cream cheese, softened

1 tsp Cajun seasoning

1 tsp garlic powder

1 tsp onion powder

1 tbsp soy sauce

12 egg roll wrappers

Oil for frying (vegetable or peanut oil)

Sweet chili sauce or your favorite dipping sauce (for serving)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the cooked pulled pork (or shredded chicken), coleslaw mix, diced jalapeños, softened cream cheese, Cajun seasoning, garlic powder, onion powder, and soy sauce. Mix well until all the ingredients are evenly incorporated.

    Wrap the Egg Rolls: Lay out an egg roll wrapper on a clean surface, angled so it looks like a diamond. Place about 2 tablespoons of the filling towards the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly up to the top corner. Seal the edge with a little water. Repeat with the remaining wrappers and filling.

      Heat the Oil: In a deep frying pan or pot, pour in enough oil to submerge the egg rolls (about 2 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).

        Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil, without overcrowding the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove the egg rolls and transfer them to a plate lined with paper towels to drain excess oil. Repeat with the remaining egg rolls.
