2 lbs chicken thighs, boneless and skinless

1/4 cup fish sauce

1/4 cup soy sauce

1/2 cup brown sugar

2 tablespoons vegetable oil

1 medium onion, finely chopped

4 cloves garlic, minced

2 inches fresh ginger, grated

2 fresh red chilies, sliced (adjust to taste)

1/2 cup coconut water or water

1 tablespoon lime juice

Fresh cilantro for garnish

Cooked jasmine rice for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken thighs, fish sauce, soy sauce, and half of the brown sugar. Mix well, cover, and let marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

    Prepare the Caramel Sauce: In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the remaining brown sugar and stir constantly until it melts and turns a deep amber color (approximately 5 minutes). Be careful not to burn the sugar.

      Add Aromatics: Quickly add the chopped onion to the caramel sauce, stirring well to coat. Sauté for 2-3 minutes until the onions soften. Then add the minced garlic, grated ginger, and sliced chilies. Sauté for another minute until fragrant.

        Add Chicken: Carefully add the marinated chicken thighs to the pot, reserving the marinade. Stir to combine with the caramel and aromatics. Cook for about 5-7 minutes, turning frequently until the chicken is browned.

          Deglaze and Simmer: Pour in the reserved marinade and coconut water (or water). Bring the mixture to a simmer, scraping the bottom of the pot to release any browned bits. Reduce heat to low, cover, and let it simmer for 20-25 minutes until the chicken is cooked through and tender.

            Finish the Dish: Once cooked, stir in the lime juice. Taste and adjust seasoning, adding more fish sauce or lime juice if necessary.

              Serve: Remove from heat, garnish with fresh cilantro, and serve the caramel ginger chicken over jasmine rice, spooning the delicious sauce on top.
