1 cup walnuts, ground

2 cups mushrooms, finely chopped (cremini or button)

1 small onion, finely diced

3 cloves garlic, minced

1 tablespoon soy sauce or tamari

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon nutritional yeast (optional)

1/2 cup breadcrumbs (gluten-free option if needed)

Fresh parsley, chopped (for garnish)

Prepare the Walnuts: Place the walnuts in a food processor and pulse until finely ground. Be careful not to over-process; they should resemble a coarse meal.

    Cook the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent. Add the minced garlic and cook for another minute until fragrant.

      Add the Mushrooms: Stir in the finely chopped mushrooms and a pinch of salt. Cook the mushrooms until they release their moisture and reduce in volume, about 5-7 minutes. Allow them to cook until the excess moisture evaporates.

        Combine Ingredients: Add the ground walnuts, soy sauce, smoked paprika, dried thyme, ground cumin, and nutritional yeast (if using) to the skillet. Mix thoroughly to combine all ingredients.

          Add Breadcrumbs: Gradually mix in the breadcrumbs until the mixture holds together and is not too dry. Adjust seasoning with salt and pepper to your taste.

            Cook the Mixture: Cook the walnut-mushroom mixture for another 5 minutes, stirring occasionally, until heated through and slightly browned.
