Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon sriracha (adjust to taste)

1 tablespoon lemon juice

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup pickles, finely chopped

1 tablespoon fresh dill or 1 teaspoon dried dill

Salt and pepper, to taste

4 slices of whole grain bread or your favorite loaf

Lettuce leaves, for serving

Optional: sliced tomatoes and avocado for topping

Instructions
 

In a medium bowl, use a fork or potato masher to mash the chickpeas until they are chunky but not completely smooth.

    Add in the vegan mayonnaise, Dijon mustard, sriracha, and lemon juice. Mix until well combined.

      Fold in the chopped celery, red onion, pickles, and dill. Stir the mixture until everything is evenly mixed. Season with salt and pepper to taste.

        Taste and adjust the spice level by adding more sriracha if desired.

          Toast the whole grain bread slices if preferred for extra crunch.

            On two slices of bread, layer the chickpea mixture generously.

              Add lettuce leaves on top, and if using, add slices of tomato and avocado.

                Place the other two slices of bread on top to create your sandwiches.

                  Cut in half, serve immediately, and enjoy your delicious vegan spicy chickpea tuna salad sandwiches!
