Ingredients

1 cup of dried coconut chips (unsweetened)

2 tablespoons of nutritional yeast

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

1 tablespoon olive oil

½ teaspoon sea salt

1 tablespoon apple cider vinegar

Optional: 1 tablespoon of your favorite hot sauce for extra kick

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the coconut chips.

Prepare the Marinade: In a mixing bowl, combine olive oil, apple cider vinegar, nutritional yeast, smoked paprika, garlic powder, onion powder, cayenne pepper, and sea salt. Mix well until it forms a uniform marinade.

Coat the Coconut Chips: Add the dried coconut chips to the bowl with the marinade. Toss the coconut chips gently until they are evenly coated in the spice mixture. If you're using hot sauce, add it at this stage and mix until thoroughly incorporated.

Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the coated coconut chips evenly across the sheet in a single layer, making sure they are not overlapping to ensure even cooking.

Bake: Place the baking sheet in the preheated oven and bake for 10 minutes. After 10 minutes, check and stir the chips to promote even browning. Bake for an additional 5-10 minutes, or until they are golden and crispy. Keep a close eye to prevent burning.

Cool Down: Remove the baking sheet from the oven and let the vegan pork rinds cool completely on the baking sheet. They will continue to crisp up as they cool.

Serve: Once cooled, transfer the vegan pork rinds to a bowl and serve them as a crunchy snack on their own or with your favorite dipping sauce or salsa.
