1 ½ cups coconut cream (chilled)

½ cup natural peanut butter (smooth)

¼ cup maple syrup

1 teaspoon vanilla extract

1 tablespoon almond milk (or any plant-based milk)

A pinch of sea salt

For the Chocolate Ganache:

1 cup dairy-free dark chocolate chips

½ cup coconut milk (full-fat)

1 teaspoon vanilla extract

Garnish (optional):

Chopped peanuts

Fresh berries

Instructions
 

Prepare the Peanut Butter Mousse:

    - In a mixing bowl, gently scoop out the chilled coconut cream, avoiding the liquid at the bottom of the can.

      - Using a hand mixer or a whisk, beat the coconut cream until light and fluffy (about 2-3 minutes).

        - Add the natural peanut butter, maple syrup, vanilla extract, almond milk, and a pinch of sea salt. Mix until well combined and creamy. Adjust sweetness if necessary.

          - Spoon the mousse into serving glasses or bowls and refrigerate while preparing the ganache.

            Make the Chocolate Ganache:

              - Place the dairy-free chocolate chips in a heatproof bowl.

                - In a small saucepan, heat the coconut milk over medium heat until it just starts to simmer (do not boil).

                  - Pour the hot coconut milk over the chocolate chips and let it sit for 2-3 minutes to melt.

                    - Add the vanilla extract and whisk until smooth and glossy.

                      Assemble:

                        - Once the ganache is ready, remove the mousse from the fridge and pour the warm ganache over the mousse.

                          - Use a spatula or back of a spoon to spread it evenly on top.

                            - Chill in the fridge for at least 30 minutes to set.

                              Serve:
