2 cans young green jackfruit in water or brine (not syrup), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 cup BBQ sauce (homemade or store-bought)

4 whole wheat sub rolls or hoagie buns

Fresh coleslaw (for topping, optional)

Pickles (for topping, optional)

Instructions
 

Prepare the Jackfruit: Cut the jackfruit into smaller pieces, discarding the hard core and removing the seeds if present. Rinse and set aside.

    Sauté Vegetables: In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Jackfruit: Add the jackfruit pieces to the pan. Sprinkle with smoked paprika, cumin, chili powder, salt, and pepper. Sauté for about 5 minutes, stirring occasionally.

        Simmer with BBQ Sauce: Pour in the BBQ sauce, stirring to coat the jackfruit evenly. Reduce the heat to low, cover the pan, and let it simmer for 20-25 minutes, stirring occasionally, until the jackfruit is tender and easily shredded with a fork.

          Shred the Jackfruit: Once cooked, use two forks to shred the jackfruit pieces. Mix well with the sauce to combine thoroughly. If you prefer a slightly caramelized texture, increase the heat to medium-high and cook for another 5-10 minutes uncovered, allowing any excess sauce to evaporate.

            Assemble the Sandwiches: Split the whole wheat sub rolls and lightly toast them if desired. Generously spoon the BBQ shredded jackfruit onto each roll. Top with fresh coleslaw and pickles, if using.

              Serve: Serve the sandwiches warm with extra BBQ sauce on the side.
