Ingredients

2 sheets of puff pastry, thawed

2 cups whole milk

½ cup granulated sugar

¼ cup cornstarch

4 large egg yolks

1 tablespoon vanilla extract

1 tablespoon unsalted butter

1/2 teaspoon salt

1 egg (for egg wash)

Powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into a large rectangle (about 10x12 inches). Transfer the cut pastries onto a parchment-lined baking sheet.

Egg Wash: In a small bowl, beat the egg and brush the surface of each pastry with the egg wash. This will give it a beautiful golden color when baked.

Bake Pastry: Bake the puff pastry in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown. Remove from the oven and let cool.

Make Custard: In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually add the milk, whisking continuously. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil and thickens (about 5-7 minutes).

Prepare Egg Mixture: While the milk mixture is heating, whisk the egg yolks in a separate bowl. Once the milk mixture is boiling, slowly pour a small amount into the egg yolks, whisking constantly to temper the eggs.

Combine & Cook: Pour the tempered egg mixture back into the saucepan and cook for an additional 2-3 minutes, stirring constantly until thickened. Remove from heat and stir in the vanilla extract and butter until smooth.

Assemble the Cake: Once the puff pastry is completely cooled, layer one piece on a serving platter. Pour half of the custard filling over the pastry, spreading it evenly. Place the second puff pastry on top and pour the remaining custard over it.

Chill & Serve: Chill the cake in the refrigerator for at least 2 hours to set the custard. Before serving, dust with powdered sugar if desired.

Enjoy Your Creation: Slice the Vanilla Custard Puff Pastry Cake and enjoy the beautiful layers of flaky pastry and smooth, vanilla custard!
