For the Patty Melt:

1 lb ground beef (80/20 blend)

1 medium onion, thinly sliced

4 slices of Swiss cheese

4 slices of rye bread

2 tbsp unsalted butter

Salt and pepper to taste

For the Secret Sauce:

1/4 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper to taste

Instructions
 

Prepare the Secret Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper. Mix well until smooth. Set aside.

    Cook the Onions: In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the thinly sliced onions. Sauté for about 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown. Season with a pinch of salt. Remove onions from the skillet and set aside.

      Shape the Patties: In a bowl, season the ground beef with salt and pepper. Divide the mixture into four equal portions and form into patties, making them slightly larger than the bread as they will shrink while cooking.

        Cook the Patties: In the same skillet, add the remaining tablespoon of butter and increase the heat to medium-high. Place the patties in the skillet and cook for about 3-4 minutes on each side, depending on your desired level of doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

          Assemble the Patty Melt: Spread the secret sauce generously on one side of each slice of rye bread. On two slices of bread, add a cheeseburger patty, followed by a generous spoonful of caramelized onions, and top with another slice of bread (sauce side down).

            Grill the Patty Melt: Wipe the skillet clean and return it to medium heat. Butter the outside of the assembled sandwiches. Grill each sandwich for about 3-4 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted.

              Serve and Enjoy: Remove sandwiches from the skillet, slice in half, and serve warm with extra secret sauce on the side for dipping!
