Ingredients

For the Patty Melt:

1 lb ground beef (80/20 blend)

1 medium onion, thinly sliced

4 slices Swiss cheese

8 slices of rye bread

2 tablespoons unsalted butter

Salt and pepper to taste

For the Secret Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon pickle relish

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Prepare the Secret Sauce:

    - In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, salt, and pepper. Mix well until smooth and set aside.

      Caramelize the Onions:

        - In a skillet over medium heat, add a tablespoon of butter. Once melted, add the thinly sliced onions. Cook for about 15-20 minutes, stirring occasionally until they are soft, golden, and caramelized. Remove from skillet and set aside.

          Form the Beef Patties:

            - In a mixing bowl, season the ground beef with salt and pepper. Form the beef into two equal-sized patties, making a slight indentation in the center of each patty to prevent them from puffing up while cooking.

              Cook the Patties:

                - In the same skillet, increase the heat to medium-high. Add the beef patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness. When flipping the patties, add a slice of Swiss cheese on top of each patty during the last minute of cooking to melt.

                  Assemble the Patty Melt:

                    - Butter one side of each slice of rye bread. On the unbuttered side of four slices, spread a generous amount of the secret sauce. Layer the caramelized onions, followed by the beef patties with melted cheese, and top with the remaining slices of bread (buttered side out).

                      Grill the Patty Melt:

                        - In the skillet, cook the assembled sandwiches over medium heat for about 3-4 minutes per side, or until the bread is golden brown and crispy and the cheese is gooey.

                          Serve:

                            - Remove from the skillet, let cool for a minute, then slice in half and serve with extra secret sauce on the side for dipping.
