1 lb ground beef

1/2 lb ground pork

1/2 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

8-10 slices of bacon

1/2 cup BBQ sauce (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.

    Prepare Meat Mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, egg, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper. Mix until just combined—be careful not to overmix.

      Shape Bacon: Take a slice of bacon and cut it in half. Line each muffin cup with two half-slices of bacon, overlapping them around the edges to create a cup.

        Fill with Meat Mixture: Gently pack the meat mixture into each bacon-lined cup, filling them about three-quarters full.

          Wrap with Bacon: If you have any leftover bacon, you can lay another half-slice across the top of each meatloaf cup for extra flavor.

            Bake: Bake the meatloaf cups in the preheated oven for 25-30 minutes or until cooked through and the bacon is crispy.

              Glaze (optional): About 5 minutes before they are done, brush the tops with BBQ sauce for a sticky and sweet finish.

                Serve: Once baked, remove from the oven and let them cool for a few minutes. Carefully lift each meatloaf cup out of the tin, garnish with fresh parsley, and serve warm.
