Ingredients
  

4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup milk

1/4 cup unsalted butter, melted

1/2 cup cooked and crumbled bacon

1/4 cup chopped green onions (scallions)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup additional shredded cheddar cheese for topping

1/4 cup chopped fresh parsley (for garnish, optional)

Instructions
 

Preheat your oven to 400°F (200°C). Prick the potatoes with a fork multiple times and bake them directly on the oven rack for about 45 minutes to an hour, or until they are tender. Let them cool slightly.

    Once the potatoes are cool enough to handle, peel the skins off and place the flesh in a large mixing bowl. Mash the potatoes until smooth.

      Add the sour cream, melted butter, milk, garlic powder, onion powder, salt, and pepper to the mashed potatoes. Mix until well combined.

        Gently fold in the cooked bacon, green onions, and 1 cup of shredded cheddar cheese into the potato mixture.

          Transfer the mashed potato mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Sprinkle the additional 1/2 cup of shredded cheddar cheese evenly over the top.

              Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it cool for a few minutes. If desired, garnish with chopped fresh parsley before serving.
