8 oz penne pasta

2 boneless, skinless chicken breasts

3 tbsp olive oil, divided

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side or until fully cooked and golden brown. Remove from skillet and let rest for 5 minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook until they start to soften (about 3-4 minutes). Stir in the fresh spinach and cook until wilted.

        Make the Sauce: Reduce heat to low and pour in the heavy cream. Stir gently and bring to a simmer. Gradually add the grated Parmesan cheese, stirring until melted and combined. Season with additional salt and pepper to taste.

          Combine: Add the cooked penne pasta to the skillet and toss until well coated with the sauce. Add the sliced chicken on top and gently mix to combine everything evenly.

            Serve: Plate the Tuscan Sunset Chicken Pasta and garnish with fresh basil leaves for an aromatic touch. Optionally, sprinkle extra Parmesan cheese on top before serving.
