1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 cup fresh pineapple, diced (or canned, drained)

1 bell pepper, sliced (red, yellow, or orange for sweetness)

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

2 cups broccoli florets

1 carrot, thinly sliced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 tablespoon honey (or to taste)

Salt and pepper to taste

Cooked rice or noodles, for serving

Chopped green onions and sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces with soy sauce, oyster sauce, cornstarch, and honey. Let it marinate for at least 15 minutes while prepping the other ingredients.

    Prepare the Stir-Fry Sauce: In a small bowl, whisk together remaining soy sauce, honey, and sesame oil. Set aside.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add a little more oil if necessary. Toss in the garlic and ginger, sautéing for about 30 seconds until fragrant. Add the sliced onion, bell pepper, broccoli, and carrot. Stir-fry for about 3-4 minutes until the vegetables start to soften but still retain their crunch.

          Combine Ingredients: Add the cooked chicken back to the pan along with the diced pineapple and stir-fry sauce. Stir everything together until well-coated and heated through, about 2-3 more minutes. Adjust seasoning with salt and pepper as needed.
