1 fully cooked spiral-cut ham (about 8-10 pounds)

1 cup brown sugar

1/2 cup honey

1/2 cup pineapple juice

1/4 cup coconut milk

1 tablespoon Dijon mustard

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

Fresh pineapple slices (for garnish)

Shredded coconut (toasted, for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Ham: Remove the ham from the packaging and place it in a large roasting pan, cut side down. Score the surface of the ham in a diamond pattern about 1/2 inch deep.

      Make the Tropical Glaze: In a medium saucepan over medium heat, combine the brown sugar, honey, pineapple juice, coconut milk, Dijon mustard, ground ginger, cinnamon, cloves, and cayenne pepper (if using). Stir until the sugar has dissolved and the mixture is well combined. Bring to a light simmer and let it cook for about 5-7 minutes until slightly thickened.

        Glaze the Ham: Reserve 1/2 cup of the glaze for later. Brush the remaining glaze over the ham, making sure to get it into the scored areas for flavor.

          Bake the Ham: Cover the ham loosely with aluminum foil and bake in the preheated oven for 1 hour. After 1 hour, remove the foil and baste the ham with the drippings from the bottom of the pan. Brush additional glaze over the ham. Return the ham to the oven and bake for another 30 minutes, uncovered, until the ham is heated through and caramelized.

            Final Glaze: In the final 15 minutes of baking, brush the reserved glaze on top of the ham to create a shiny and flavorful finish.

              Serve: Once done, remove the ham from the oven and let it rest for 10-15 minutes. Garnish with fresh pineapple slices, toasted shredded coconut, and mint leaves before serving.
