For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple, drained

½ cup shredded coconut (sweetened or unsweetened)

For the Pineapple Glaze:

1 cup powdered sugar

3 tablespoons pineapple juice (from the crushed pineapple)

1 teaspoon lemon juice

For Garnish:

Toasted coconut flakes

Fresh pineapple slices

Mint leaves

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.

      Prepare the batter:

        In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

          Cream the butter and sugar:

            In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.

              Add eggs and vanilla:

                Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully combined.

                  Combine with dry ingredients:

                    Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

                      Stir in pineapple and coconut:

                        Gently fold in the crushed pineapple and shredded coconut into the batter until evenly distributed.

                          Bake the cake:

                            Pour the batter into the prepared baking pan(s) and spread evenly. Bake in the preheated oven for 25-30 minutes (for round cakes) or 30-35 minutes (for a 9x13 pan), or until a toothpick inserted into the center comes out clean.

                              Cool the cake:

                                Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                                  Make the glaze:

                                    In a small bowl, whisk together the powdered sugar, pineapple juice, and lemon juice until smooth. Adjust the consistency by adding more juice if needed.

                                      Glaze the cake:

                                        Once the cake is completely cool, drizzle the pineapple glaze evenly over the top.

                                          Garnish:

                                            For a beautiful presentation, sprinkle toasted coconut flakes over the glaze, add fresh pineapple slices around the edges, and garnish with mint leaves.

                                              Serve:
