1 ½ cups all-purpose flour

1 cup sugar

½ cup unsalted butter, softened

2 large eggs

1 cup crushed pineapple (drained)

½ cup coconut milk

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup shredded coconut (sweetened or unsweetened)

Fresh pineapple slices, for garnish

Optional: Whipped cream or coconut whipped cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

    Cream the Butter and Sugar: In a large mixing bowl, beat together the softened butter and sugar until light and fluffy, about 3-4 minutes. Use an electric mixer for best results.

      Add Eggs and Flavorings: Add the eggs, one at a time, mixing well after each addition. Then, stir in the coconut milk and vanilla extract until well combined.

        Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Incorporate Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut into the batter until evenly distributed.
