Ingredients

8 oz (225g) penne pasta

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 lb (450g) Italian sausage, casings removed

1 can (14 oz) diced tomatoes (with juices)

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Brown the Sausage: Add the Italian sausage to the skillet. Break it apart with a spatula and cook until browned and no longer pink, about 5-7 minutes.

Add Tomatoes and Seasonings: Pour in the diced tomatoes (with their juices), dried basil, and dried oregano. Season with salt and pepper to taste. Simmer for 5-10 minutes until the mixture thickens slightly.

Incorporate Spinach: Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.

Mix in Pasta: Add the cooked penne pasta to the skillet, tossing everything together to evenly coat the pasta with the sausage and tomato sauce. Sprinkle in 1/2 cup of grated Parmesan cheese and mix well until the cheese is melted and incorporated.

Serve: Divide the pasta among plates, garnishing with additional grated Parmesan cheese and fresh basil leaves.

                Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the pasta in deep bowls, drizzled with a little more olive oil and a sprinkle of red pepper flakes for a touch of heat. Add a slice of crusty bread on the side for a complete meal. Enjoy your delicious creation!
