8 oz (225g) pasta of your choice (fusilli or penne works well)

1 cup cottage cheese (preferably ricotta-style for creaminess)

2 cups ripe tomatoes, diced (or 1 can of diced tomatoes)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1 teaspoon dried oregano

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for heat)

1/4 cup grated Parmesan cheese (for serving)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.

      Prepare the Tomato Sauce:

        - In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant (be careful not to burn it).

          - Add the diced tomatoes (fresh or canned) to the skillet, and stir in dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Cook for about 5-7 minutes, allowing the tomatoes to soften and release their juices.

            Combine with Cottage Cheese:

              - Reduce the heat to low, then add the cottage cheese to the skillet. Stir well to incorporate it into the sauce. Let it simmer for an additional 2-3 minutes to warm through. If the sauce is too thick, add some reserved pasta water gradually until the desired consistency is reached.

                Mix with Pasta:

                  - Add the drained pasta directly to the skillet with the sauce. Toss to coat all the pasta evenly. Adjust seasoning with more salt and pepper if needed.

                    Serve:
