1 sheet of puff pastry, thawed

2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced thinly

1 cup brie cheese, rind removed and cut into small pieces

1/4 cup brown sugar

1/4 cup unsalted butter

1 tsp cinnamon

1 tsp vanilla extract

1 egg, beaten (for egg wash)

Fresh thyme leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Apples: In a medium saucepan, melt the butter over medium heat. Add the sliced apples, brown sugar, cinnamon, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally, until the apples are just tender. Remove from heat and let cool slightly.

      Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth out and thin it slightly. Cut the pastry into four equal squares.

        Assemble the Tarts: In the center of each pastry square, layer the cooked apple mixture evenly. Top the apples with pieces of brie cheese.

          Create the Edges: Fold the edges of the puff pastry squares over the apple and brie filling to create a small border. Brush the edges with the beaten egg for a nice golden color when baked.
