Ingredients

For the Crust:

1 1/2 cups chocolate cookie crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

For the Cheesecake Filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1/2 cup sour cream

1 cup brewed coffee, cooled (preferably strong)

2 tablespoons coffee liqueur (optional)

1 tablespoon all-purpose flour

For the Topping:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Chocolate shavings or cocoa powder for garnish

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.

        - Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

              - Add granulated sugar and vanilla extract, mixing until well combined.

                - Incorporate the eggs, one at a time, mixing gently after each addition to avoid over-beating.

                  - Add the sour cream, cooled brewed coffee, coffee liqueur, and flour. Mix until everything is well incorporated and no lumps remain.

                    Bake the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust in the springform pan.

                        - Bake for about 60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                          - Afterward, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.

                            Prepare the Topping:

                              - In a mixing bowl, use an electric mixer to whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

                                - Spread the whipped cream evenly over the cooled cheesecake.

                                  Serve:

                                    - Carefully remove the cheesecake from the springform pan. Garnish with chocolate shavings or a dusting of cocoa powder.

                                      - Slice and serve chilled for the best taste and texture. Enjoy your decadent coffee lover's cheesecake!
