Ingredients
  

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

3 cups mixed vegetables (frozen or fresh)

1 can (15 oz) diced tomatoes

2 cups cooked potatoes or hash browns

1 cup shredded cheddar cheese

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, brown the ground beef over medium heat, breaking it up into small pieces. Add the diced onion and minced garlic, cooking until the onion is translucent. Drain excess fat if necessary.

      Stir in the mixed vegetables, diced tomatoes (with their juices), cooked potatoes or hash browns, oregano, paprika, salt, and pepper. Mix well until all ingredients are combined.

        Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.

          Top with shredded cheddar cheese, ensuring even coverage across the casserole.

            Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

              Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.
