4 large Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup shredded sharp cheddar cheese (plus extra for garnish)

3 green onions, sliced (for garnish)

Optional: crispy bacon bits for topping

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

      Add the diced potatoes to the pot and pour in the vegetable or chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to puree the soup until smooth (or transfer to a blender in batches but be cautious of the hot liquid).

          Return the soup to the pot, and stir in the heavy cream, dried thyme, smoked paprika, salt, and black pepper. Heat over low for about 5 minutes, until warmed through.

            Add the shredded cheddar cheese and stir until melted and creamy. Adjust seasoning as necessary.

              Serve hot, garnished with additional cheddar cheese, sliced green onions, and crispy bacon bits if desired.
