For the Dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

½ cup warm milk (110°F)

¼ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tsp salt

For the Filling:

½ cup unsalted butter, softened

1 cup brown sugar, packed

2 tbsp ground cinnamon

1 cup chopped pecans or walnuts (optional)

1 cup raisins (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

2 tbsp milk (as needed for consistency)

Prepare the Dough: In a small bowl, combine the warm milk and sugar. Sprinkle the yeast on top and let it activate for about 5-10 minutes until frothy.

    Mix Ingredients: In a large mixing bowl, combine 2 cups of flour and salt. Make a well in the center and add the melted butter, eggs, and the yeast mixture. Gradually add the rest of the flour, mixing until a soft dough forms.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot until doubled in size, about 1 hour.

        Prepare the Filling: While the dough is rising, mix the softened butter, brown sugar, and cinnamon in a medium bowl until well combined. If using, mix in the chopped nuts and raisins.

          Roll Out the Dough: Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about ¼ inch thick.

            Spread the Filling: Evenly spread the cinnamon filling over the rolled-out dough, leaving a small border around the edges.

              Roll and Cut: Starting from one edge, tightly roll the dough into a log. Cut the log into 12 even slices.
