Ingredients

2 large sweet potatoes, peeled and cubed

1 cup fresh sage leaves, chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup pecans, roughly chopped

1/4 cup dried cranberries

Zest of 1 orange

2 tablespoons maple syrup

Instructions

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the cubed sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the sweet potatoes are well coated.

Spread the sweet potatoes out in a single layer on a baking sheet. Bake for 25 minutes, stirring halfway through.

After 25 minutes, add the chopped sage, pecans, and dried cranberries to the sweet potatoes. Drizzle with maple syrup and toss everything together lightly.

Return the tray to the oven and bake for an additional 10-15 minutes until the sweet potatoes are tender and the edges are slightly caramelized.

Remove from the oven and zest the orange over the top for a fresh finish. Give it a final toss before serving.
