Ingredients
  

1 lb chicken breast, thinly sliced

2 tablespoons red curry paste

1 can (14 oz) coconut milk

1 cup chicken broth

1 cup bell peppers (red, yellow, and green), sliced

1 cup broccoli florets

1 cup snow peas

2 tablespoons fish sauce

1 tablespoon brown sugar

2 tablespoons vegetable oil

1 tablespoon fresh lime juice

Fresh basil leaves, for garnish

Cooked jasmine rice, for serving

Instructions
 

In a large skillet or wok, heat the vegetable oil over medium heat.

    Add the red curry paste and sauté for 1-2 minutes until fragrant.

      Stir in the sliced chicken breast, cooking until browned and fully cooked.

        Pour in the coconut milk and chicken broth, stirring to combine. Bring to a simmer.

          Add the fish sauce, brown sugar, and lime juice. Stir until the sugar has dissolved.

            Add the sliced bell peppers, broccoli, and snow peas to the pan. Cook for an additional 5-7 minutes until the vegetables are tender-crisp.

              Taste and adjust seasoning if needed.

                Serve the Thai red curry over jasmine rice and garnish with fresh basil leaves.
