200g rice noodles

1 tablespoon vegetable oil

1 onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2-3 tablespoons red curry paste (adjust to taste)

1 can (400ml) coconut milk

4 cups vegetable or chicken broth

1 tablespoon soy sauce

1 tablespoon lime juice

1 cup bell peppers, sliced (red and yellow for color)

1 cup snap peas or green beans, trimmed

1 cup mushrooms, sliced

Fresh cilantro, for garnish

Sliced scallions, for garnish

Lime wedges, for serving

Chili flakes or fresh sliced chili, for spice (optional)

Instructions
 

Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and set aside.

    Sauté the Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
