1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 bell pepper, sliced (any color)

1 medium onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 cup coconut milk

1/2 cup peanut butter (creamy or chunky)

3 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon lime juice

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup chopped fresh cilantro (for garnish)

Cooked rice or rice noodles (for serving)

Crushed peanuts (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for about 4-5 minutes until they start to soften. Add the minced garlic and ginger, and cook for an additional minute until fragrant.

      Make the Peanut Sauce: Lower the heat to medium, and to the skillet, add the coconut milk, peanut butter, soy sauce, brown sugar, lime juice, and red pepper flakes. Stir well to combine all the ingredients until the sauce is creamy and smooth.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet and stir to coat it in the peanut sauce. Allow it to simmer for about 5 minutes to heat through and absorb the flavors.
