10 oz wide rice noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1 small red chili, sliced (adjust for spice preference)

1 bell pepper, sliced (red or yellow)

1 cup broccoli florets

1 carrot, julienned

1 cup cooked protein (tofu, chicken, shrimp, or beef)

2 tablespoons soy sauce

1 tablespoon oyster sauce (or a vegan alternative)

1 tablespoon fish sauce (or a vegan alternative)

1 tablespoon dark soy sauce

1 teaspoon sugar

Fresh basil leaves, to taste

Juice of 1 lime

Optional: crushed peanuts and lime wedges for garnish

Instructions
 

Prep the Noodles: Soak the rice noodles in hot water for about 30 minutes or until soft. Drain and set aside.

    Prepare the Sauce: In a small bowl, mix soy sauce, oyster sauce, fish sauce, dark soy sauce, and sugar. Stir until the sugar is dissolved. Set aside.

      Cook the Vegetables: In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and sliced chili, sauté for about 30 seconds until fragrant.

        Stir-Fry: Add the bell pepper, broccoli, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Add Protein: If using a protein, add it to the skillet now and cook for another 2-3 minutes, ensuring everything is heated through.

            Combine Noodles and Sauce: Add the softened rice noodles to the skillet, then pour the prepared sauce over everything. Toss gently to coat all the ingredients evenly, and stir-fry for an additional 2-3 minutes.

              Finish with Basil and Lime: Remove from heat, stir in fresh basil and the juice of one lime for added flavor.

                Serve: Plate the noodles and garnish with crushed peanuts and lime wedges if desired.
