Ingredients
  

1 pound chicken breast, cut into strips

2 tablespoons vegetable oil

2 tablespoons soy sauce

1 tablespoon fresh lime juice

2 cloves garlic, minced

1 tablespoon brown sugar

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 cup coconut milk

1/4 cup creamy peanut butter

2 tablespoons rice vinegar

1 tablespoon honey

Salt and pepper, to taste

Skewers (soaked in water if wooden)

Instructions
 

In a mixing bowl, combine the vegetable oil, soy sauce, lime juice, minced garlic, brown sugar, cumin, coriander, turmeric, cayenne pepper, and coconut milk. Mix well to create a marinade.

    Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (up to overnight for deeper flavor).

      Preheat your grill or grill pan over medium-high heat. While the grill is heating, prepare your peanut sauce by whisking together the peanut butter, rice vinegar, honey, and a pinch of salt in a small bowl until smooth. If it’s too thick, add a little warm water to reach your desired consistency.

        Thread the marinated chicken strips onto the soaked skewers, trying to keep them evenly spaced.

          Grill the skewers for about 3-4 minutes on each side or until the chicken is cooked through and has a nice char. Baste with additional marinade during cooking for extra flavor if desired.

            Remove from the grill and let rest for a few minutes. Serve hot with the peanut sauce for dipping and garnish with chopped cilantro or crushed peanuts if desired.
