2 cups of chicken breast, thinly sliced

6 cups of chicken broth

1 can (14 oz) coconut milk

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, minced

1 onion, sliced

1 red bell pepper, sliced

1 cup snap peas

2 tablespoons red curry paste

2 tablespoons fish sauce

2 tablespoons lime juice

1 teaspoon sugar

200g rice noodles

Fresh cilantro, for garnish

Lime wedges, for serving

Sliced green onions, for garnish

Instructions
 

Prepare the Rice Noodles: Soak the rice noodles in boiling water for about 5-7 minutes or until soft, then drain and set aside.

    Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and sliced onion. Sauté for about 3-4 minutes until fragrant and onions become translucent.

      Cook the Chicken: Add the sliced chicken to the pot and cook until it's no longer pink, about 5 minutes.

        Add Vegetables: Stir in the sliced red bell pepper and snap peas, cooking for another 2-3 minutes.

          Combine Broth and Coconut Milk: Pour in the chicken broth and coconut milk. Mix well, and bring the soup to a gentle simmer.

            Flavor it Up: Stir in the red curry paste, fish sauce, lime juice, and sugar. Allow the soup to simmer for an additional 10 minutes, letting the flavors meld.
