Ingredients
  

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 can (4 oz) diced green chilies, drained

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust for heat preference)

1/4 teaspoon salt

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Oil for frying

Instructions
 

In a mixing bowl, combine the shredded cheddar cheese, cream cheese, diced green chilies, chopped green onions, garlic powder, cayenne pepper, and salt. Stir until everything is well incorporated.

    Once mixed, use your hands to form small balls or patties with the cheese mixture, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

      Freeze the cheese balls for about 30 minutes to help them hold their shape during frying.

        While the cheese balls are chilling, set up a breading station: place the panko breadcrumbs in one bowl, the flour in another, and the beaten eggs in a third bowl.

          Heat oil in a deep fryer or large pot to 350°F (175°C).

            Remove the cheese balls from the freezer. Roll each ball first in the flour, then dip in the beaten eggs, and finally coat in the panko breadcrumbs, ensuring they are well covered.

              Fry the breaded balls in batches, being careful not to crowd the pot. Cook for about 2-3 minutes, or until golden brown and crispy.

                Remove the Rattlesnake Bites with a slotted spoon and let them drain on paper towels to remove excess oil.

                  Serve hot with ranch or jalapeño ranch dipping sauce for an extra kick!
