Teriyaki Chicken Casserole

Ingredients
  

2 cups cooked chicken, shredded

1 cup uncooked jasmine rice

2 cups broccoli florets

1 red bell pepper, diced

1 cup shredded carrots

1 can (15 oz) coconut milk

1 cup teriyaki sauce

1/2 cup low-sodium chicken broth

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the shredded chicken, uncooked jasmine rice, broccoli florets, diced bell pepper, and shredded carrots.

      In a separate bowl, whisk together the coconut milk, teriyaki sauce, chicken broth, sesame oil, minced garlic, grated ginger, and black pepper until smooth.

        Pour the sauce mixture over the chicken and vegetable mixture, stirring well to ensure everything is evenly coated.

          Transfer the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

            Cover the casserole dish with aluminum foil to retain moisture.

              Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the rice is fully cooked and the top is slightly golden.

                Remove from the oven and let cool for a few minutes before serving.

                  Garnish with chopped green onions and sesame seeds before serving.
