2 filet mignon steaks (6-8 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

1 cup cremini mushrooms, sliced

1 shallot, finely chopped

2 cloves garlic, minced

1/2 cup dry red wine

1 cup beef broth

1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

1 tablespoon Worcestershire sauce

1-2 sprigs fresh parsley, for garnish

Instructions
 

Prepare the Steaks: Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and freshly ground black pepper.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat until shimmering. Carefully add the seasoned filet mignon steaks and sear for about 3-4 minutes on each side for medium-rare (or longer, depending on your desired doneness). Remove the steaks from the skillet and place them on a plate to rest while you prepare the sauce.

      Make the Mushroom Sauce: In the same skillet, add the butter. Once melted, add the sliced cremini mushrooms and sauté for about 5 minutes, or until they are softened and golden. Stir in the chopped shallot and minced garlic, cooking for another 2-3 minutes until fragrant and slightly translucent.

        Deglaze the Pan: Pour in the dry red wine and scrape any browned bits from the bottom of the skillet, allowing it to simmer for about 2-3 minutes until reduced by half.

          Add Broth and Seasonings: Stir in the beef broth, fresh thyme, and Worcestershire sauce. Simmer for an additional 5-7 minutes until the sauce thickens. Taste and adjust seasoning if needed.

            Serve: Place the filet mignon steaks on plates and generously spoon the mushroom sauce over the top. Garnish with fresh parsley.
